Honey, it’s Friday!

Today, we’re thinking about porridge… because there’s nothing like it for brightening up a dark January morning. Dolloped with jam, drizzled with honey, scattered with seeds or bubbling with British berries – Bill Jordan himself calls it soul food. And the best thing about it is that there are no rules with porridge! You can have it exactly the way you like it. You’ve made it! Celebrate the arrival of the weekend with a bowl of this sweet and creamy Honey & Yoghurt Porridge with Banana recipe.

 

Ingredients (serves one)

50g jumbo oats – try our Chunky Traditional Porridge

1 ripe banana

50g 0% fat Greek-style yoghurt

350ml semi-skimmed milk

2 tsp clear honey

 

Method

Place the oats in a saucepan.  Mash half the banana. Put aside 1tbsp of yoghurt, then mix the mashed banana with the remaining yoghurt, milk and 1 tsp honey. Pour the mixture over the oats.  Heat to just below boiling, and simmer gently for 7-8 minutes, while stirring.

 

Pour into a bowl, slice the remaining banana and scatter on top. Add the remaining 1 tbsp Greek yoghurt and drizzle over the remaining honey.

 

Cook’s Tip: Swap the banana for raspberries when in season

I add a little manuka honey and ground linseed to my porridge and it's sooo good!
