Raspberry Yogurt Muffins

Posted by Rachel Marston 02 Jul 2009 4:45pm

This recipe has been leant to us by St Helen's Farm, the family firm behind some of the UK's finest goats' milk products.

Makes 12 muffins

Ingredients:
200 g (7 oz) plain flour
1/2 tsp salt
1 1/2 tsp baking powder
75 g (3 oz) porridge oats
1 x 125 g tub St Helen’s Farm natural goats milk yogurt
1 tsp bicarbonate of soda
1 egg, lightly beaten
125 g (5 oz) light Muscovado sugar
120 ml (4 fl oz) St Helen’s Farm Goats’ Milk
75 g (3 oz) St Helen’s Farm Goats Butter, melted and cooled
75 g (3 oz) frozen or fresh raspberries

To Decorate:
50 g (2 oz) icing sugar

Method:
1. Pre-heat oven to 200°C or Gas Mark 6. Put 12 muffin cases into a muffin tin.
2. Sift together the flour, salt and baking powder and set to one side.
3. Just before baking, mix together the porridge oats, yogurt and bicarbonate of soda. Stand for 1 minute, stir in the egg, sugar, goats’ milk and butter.
4. Pour the wet ingredients into the flour mixture and stir lightly until just combined, add the raspberries and stir them through gently. The mixture will be quite lumpy, though there should be no dry flour visible.
5. Spoon the mixture into the muffin cases and bake for approximately 20 minutes, or until tops spring back when touched lightly. Cool on a wire rack.
6. Make the icing by blending the icing sugar with a little cold water. Drizzle over the muffins and allow to set.

Cook’s Tip: The secret of successful muffins is to avoid over mixing when you add the wet ingredients to the dry ones.

Looks really good but I'll cut down on the salt as we're on a low salt regime. Incidentally this should read "This recipe has been lent to us" unless it is leaning up against something
