Oat, lemon and thyme baked chicken
Serves: 6
Prep time: 10 mins
Cook time: 1hr 40 mins
60g Jordans Natural Muesli
1 small onion, chopped
20g butter
1 x 1.5 kg free range chicken
Grated zest of 1 lemon
1 tbsp chopped thyme
2 rashers streaky bacon, halved
Bay leaf
200ml chicken stock
1 tbsp corn flour, mixed with 1 tbsp water
Salt
Freshly ground black pepper
1. Preheat the oven to 200 C/ 180 C fan/ Mk 5.
2. Cook the onion in the butter for about 5 minutes, until softened.
3. Mix together the Jordans Natural Muesli, the cooked onion, lemon zest, thyme and bay leaf. Season generously.
4. Spoon this stuffing mix into the neck end of the chicken, patting down firmly. Set the chicken on a roasting tray, and arrange the bacon neatly across the breast of the chicken.
5. Roast for 1 hour and 40 minutes, or until the juices of the chicken run clear. Baste often. When the chicken is cooked, set aside to keep warm while you make the gravy. Spoon off any excess fat from the roasting pan, and stir the stock into the juices over heat. Add the cornflour paste, and bring to a simmer. Check the seasoning.
6. To serve, chop the bacon up, slice the chicken and arrange on a warmed serving plate with the stuffing, and serve the gravy separately in a gravy jug.
