Muesli Cookies

Recipe makes approximately 16 cookies.
Again, you can experiment with any of the muesli range depending on which is your favorite. 10 minutes to prepare, 15-20 minutes to cook.
300g Jordans Fruit & Nut Muesli
120g self raising flour
100g soft brown sugar
3 tablespoon honey
1 egg, beaten
100g margarine, melted
1. Preheat the oven to 180C/160fan/gas 5
2. Combine the muesli, flour and sugar in a bowl, make a well in the centre and add the honey, egg and butter and mix well.
3. drop tablespoons of the mixture onto a greased baking tray, press down lightly with the back of a spoon.
4. Bake for 15-20 minutes until lightly golden. Allow to cool for 5 minutes them remove from the baking trays, allow to cool completely on a wire rack.

I recently made these cookies for a girly coffee morning - they were absolutely delicious and I'm so glad that they are easy to make as the girls are already expecting them for our next get-together! Thanks Jordans!

I've made them twice now with a different Jordans Muesli each time, they are fantastic! I use melted unsalted butter instead of margarine. They don't spread much when baking so I use a heaped serving spoonful for large cookies and a heaped dessert spoonful for normal sized ones.
