Our version of this popular snack is made from storecupboard ingredients in a jiffy. Serve with a cold drink for a Fathers’ Day treat.
1 cup Jordan’s Chunky Nut Country Crisp
½ cup roasted peanuts
2 tbsp sunflower oil
3 tsp turmeric
2 tsp cayenne pepper
3 tsp medium curry powder
1 tsp garlic powder
½ cup cornflakes
Sea salt
1. In a dry pan over medium heat, cook the peanuts for a minute or so until their oils are released.
2. Stir the sunflower oil in to the pan, and then add the turmeric, cayenne, curry powder and garlic powder. Stir over a medium heat until the aromas are released, about 1 minute.
3. Add the Jordan’s Chunky Nut Country Crisp, and cornflakes, and stir well. Add salt to taste. Set aside to cool. Store in an airtight container for up to 2 weeks.
4. Serve with cool beer or some elderfower cordial.
