Carol's Bircher Muesli

Our very own muesli lover Carol has created a Bircher muesli recipe for you, as she admits herself this is an art rather than a science so the measurements are not exact and you may have to experiment to get your perfect Bircher muesli recipe. This is a great start and tastes amazing, I know because we ate a lot of it last week. Here's Clares bowl; I wouldn't let her eat it before I had taken a photo!

Method:

1.Take a plastic container that has a lid and pour in enough Jordans oats for whatever size portion you want.  It will keep for at least 3-4 days in a sealed container in the fridge so you can make enough for several days. You can use either our Traditional Chunky oats but I think our Quick & Creamy oats give you a nice creamy texture. 
2. To the oats, add a good dose of apple juice. I never measure it, I just judge by eye but I would advise using the porridge method, i.e. if you use one cup of oats, use one cup of juice.
3. Add a good dollop of natural yoghurt.  I would use a large tablespoon full per portion.
4. Mix all of this together and then add dried fruit. You can use any dried fruit you fancy or have in your cupbaord e.g. raisin, sultanas, apricots, cranberries.  Add a dessertspoon per portion.  You can also add nuts at this stage but personally I prefer it with just fruit.
5. Mix thoroughly, seal the container and leave in the fridge overnight.
6. In the morning, the oats and dried fruit will have soaked up all the liquid.  This is why you don’t need to be too precise on measurements – however much liquid you’ve put in, the oats will soak it up.  At this stage, it will probably be pretty ‘solid’, so add some more yoghurt to loosen things up nicely.  You are looking for it to be the same kind of consistency as porridge.
7. Now you have your base, which you can customize by; mixing in grated apple (this was a key element of the original Bircher Muesli), mixing in fresh blueberries or topping with fruit compot, Yeo valley or Bonne Maman are both delicious if you don't have time to make your own.

There you have it, delicious, wholesome and filling, you won't be snacking before lunch after this, enjoy!

    This sounds lovely & I have made something similiar myself & add a touch of mixed spice or cinnamon to the oats before mixing with the juice to give it that little extra flavour
